C’mon now, don’t frown! It’s me… Kay! Surely you must’ve seen stranger recipes over here!
In pursuit of the one perfect ‘leftover mashed potatoes‘ recipe, I think I’ve come pretty darn close this time. I figured if I can turn the mashed taters into pancakes and soup, I should be able to turn them into muffins [...]

В моём журнале достаточно просто искать по тегам - я об этом уже писала.
Но при этом забыла, что нужно объяснить некоторые моменты.

I used to think of myself as a spring/fall girl. At least, that's what I always told people. I feel like I come alive in April and October with its golden sunsets and apple pies has that certain ephemeral charm. But I think I might have been wrong. People, I think I am an undercover summer lover.
Maybe it's just that this particular summer has me bewitched. This summer's been simply glorious. I don't remember skies ever being quite this blue or the breeze being quite this gentle. The temperature hovers around a perfect 80F and the farmers' markets are bursting with plump, velvety cherries and red-cheeked nectarines. It all has my head spinning just a little.
This gratin was the product of my Saturday morning farmers' market loot and it just tastes like July and picnics in the park and lazy dinners on the porch. Unlike the hearty, cheesy potato gratins we all love when the thermometer dips, this is light and bright with flavors, the soft zucchini and summer squash getting a little zing from a sprinkling of feta and a dash of lemon juice. If, like me, summer has you firmly in its hold, this dish will hit just the right the spot.
Zucchini & Summer Squash Gratin
serves about 4-6
2 zucchini
2 summer squash
4 eggs
1 cup milk
4 oz feta cheese, crumbled
2 teaspoons dried or fresh thyme
1 tbsp lemon juice
salt and pepper to taste
Turn the oven to 350F and butter and 8x8 in. baking dish or 4 individual baking dishes. Slice the zucchini and the squash into thin slices, about 1/4 of an inch. Toss the vegetables with the lemon juice.
Make a layer of the slices on the bottom of the baking dish, overlapping each piece. I made separate layers of zucchini and separate layers of squash, but it doesn't matter, you can mix it up. Sprinkle with salt and pepper. Continue until you have layered about half of the vegetables. Then, spread half of the feta on top. Continue layering until the vegetables reach just below the top of the baking dish. Sprinkle with some more salt and pepper. Depending on the size of the vegetables, you may have some slices left over; roast them and throw them into a pasta later.
Whisk the eggs and milk together and pour over the gratin. The liquid should almost cover the vegetables. Then, spread the rest of the feta on top and sprinkle with thyme. Bake until the vegetables are tender and the filling is set, about an hour (the filling will puff, but don't worry, it will settle down once you take it out of the oven).
Serves 4
10 chicken drumsticks.
2 tablespoons of marmalade.
1 tablespoon of wholegrain mustard.
1 tablespoon of white wine vinegar.
1 tablespoon of olive oil.
A good pinch of sea salt and ground black pepper.
Preheat the oven to 200°C/Gas Mark 6.
Add the marmalade, vinegar, mustard, oil, sea salt and black pepper in a large roasting tray, and whisk to combine. Add the chicken drumsticks to the tray and toss until all the chicken is covered in the sauce. Place the tray in the oven and cook for 40 minutes or until cooked through. Baste halfway through the cooking time. Remove the chicken from the oven and place on a plate. Place the roasting tray full of juices over a medium high heat and simmer and whisk until the sauce thickens. Serve the chicken with a tasty bulgarwheat salad and coat with the thick sticky sauce.

I just spent 48 hours with eight women I grew up with. Some, I’ve known since birth; others, elementary school, junior high, high school. Though we all saw one another at our 20-year reunion a couple of years ago, this is the first time we’ve all assembled as a group, cooked together, relaxed, and reveled in having no plastic toys to pick up or laundry to do.
We regressed, is what we did.
In future posts, I’ll show all the photos in which we’re bawling our eyes out, bringing up the past, hashing things out, talking things through, and playing quarters. But for today, I wanted to show some laughing, smiling faces from our weekend mini-reunion. It’s impossible for me to watch another person laugh and not feel better about the world.
Awww, Shelley. She’s a sweet, sweet girl and I love her. Shelley’s seven months pregnant with her third, and she looks exactly the same as she did the day we graduated.
Except for the pregnant part.
That’s Becky on the left. I’ve known her longer than I’ve known myself. Our mothers went to high school together and we were best friends in utero. Becky and I used to be bedwetters when we were little and would only spend the night at each other’s house because we knew we wouldn’t have to worry about wetting the bed. For this and other reasons, we’ll be friends into eternity.
Womb to tomb.
Birth to earth.
I’ve known Becky the longest. And ironically, I’ve known the other girl in the photo—the girl to Becky’s left—the shortest.
I’ve known her…for just 48 hours, in fact.
She’s Dorothy, sister-in-law of Kathy, with whom I’ve been friends since seventh grade. Dorothy’s married to Kathy’s brother, a member of Reckless Kelly, and was brave enough to attend a weekend reunion of former high school friends, none of whom she knew.
She wins the prize for Good Sport for listening to a houseful of women cackle about experiences she had nothing to do with. Bless her soul.
Do you ever get together with old friends? Friends who’ve known you through braces, broken hearts, and the onset of menses, in no particular order?
(Sorry, men. Please forget you ever read that last sentence.)
It made me realize how important it is to maintain lifelong connections, even if you only get together once or twice in a twenty year period. You don’t have to talk on the phone…or write regularly…or organize frequent reunions.
It’s just so reassuring to find out how “exactly the same” everyone is.
Except for the absence of fingerless neon gloves.
And acid wash zipper leg Guess jeans, dangit.
And huge clip-on bows.
And turquoise mascara.
And that extremely unfortunate “bi-level haircut.” Goodness gracious. If that’s not a euphemism for “mullet”, I don’t know what is.
LONG LIVE THE EIGHTIES!
Oh, and speaking of lifelong connections, Dorothy made one of her own this weekend.
I think it’s a friendship that will last into eternity, much like me and my odd friend Becky.
Don’t quote me on this, but I think I actually saw them exchanging email addresses.
